Shaker Fried Apples

2 quart small tart apples
1/3 pkg light brown sugar
1 teaspoon cinnamon
1/3 each stick butter

Core unpeeled apples, and cut into 6 wedges. Granny smith apples work best. Place apples in a skillet and sprinkle with brown sugar and cinnamon, and dot with butter. Cover skillet, and cook on low heat until apples are tender, stirring occasionally. Remove lid and cook 3-5 minutes longer. Serve hot.

Yield: 8 servings
