Shaker Fruit Or Berry Cobbler

2 cup fruit or berries
8 tablespoon sugar
1 tablespoon butter
1 tablespoon lemon juice
1/2 teaspoon lemon rind
2 tablespoon flour
1/8 teaspoon salt
1 each single pie crust

Pllace all ingredients, accept crust, in a large bowl. Two additional tablespoons sugar can be added, if fruit is to tart. Add 1-2 tablespoons water, if fruit seems to need juice. Roll out 1 pie crust in a long thin oval. Place fruit mixture on crust, and dot with butter. Roll into a long roll, like a jelly roll. Prick top with fork. Place roll on lightly greased baking sheet, or dish. Bake at 425 degrees, 40 minutes. Slice and serve warm.

Yield: 10 servings
