Shaker Hot Brown

4 each slices bread, toasted
4 each slices, turkey or chicken
8 each slices bacon, cooked
1/2 cup american cheese
1/2 cup sharp cheddar cheese
2 tablespoon butter
2 tablespoon flour
1 cup milk
1/2 teaspoon salt
1/8 teaspoon cayeen pepper
1/4 teaspoon curry
1/4 cup american cheese, grated
1/4 cup sharp cheddar cheese, grated

Melt butter in sauce pan. Add flour, salt, cayeen pepper, and curry. Stir constantly until mixture is smooth and bubbley. Add milk, and continue stirring until smooth. Cook, stirring constantly, until mixture thickens. Stir in 1/4 cup American, and 1/4 c cheddar cheeses. Remove sauce pan from heat. To assemble, place turkey or chicken on toast, on 4 oven safe dishes. Cover with cream sauce. Top with remaining grated cheese, bacon,or ham. Place under broiler about 6 inches from heat, and broil slowly until bacon is fully cooked. Serve hot from broiler.
