Shaker Lemon Bread

1/3 cup butter
1 1/3 cup sugar, divided
2 each eggs
1 1/2 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 each lemon, grated rind only
1 each lemon, juice only
1/2 cup nuts

Cream butter and 1 cup sugar until light and fluffy. Add eggs, and beat well. Add baking powder, salt, and mix well. Add milk. Add flour and blend thoroughly. Add lemon rind and nuts. Pour batter into 1 greased loaf pan, or 2 small loaf pans. Bake at 350 degrees, for 1 hour.To prepare lemon glaze, combine 1/3 cup sugar and lemon juice. Pour over bread immediately after removing from oven.

Yield: 12 servings
