Shaker Lemon Pie

2 each lemons
2 cup sugar
4 each eggs
2 each 9 inch pie shells

Slice unpeeled lemons paper thin. Place in bowl and add sugar. Mix well and let stand 2 hours. Beat eggs and add to lemon mixture. Line pie pan with unbaked pie crust. Fill with lemon mixture. Adjust top crust and cut several slits in crust. Bake at 450 degrees, 15 minutes. Reduce heat to 350 degrees, and bake 20-25 minutes longer.

Yield: 8 servings
