Shaker Lemon Tarts

2 each eggs, beaten
1 cup sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1 tablespoon grated lemon rind
2 tablespoon melted butter

Combine eggs, sugar, and salt. Beat slightly to blend. Stir in remaining ingredients. Pour into unbaked tart cups that are not fluted. Bake at 375 degrees, 14-20 minutes, until crust is brown and filling puffed. If tart shells are not available, make tart shells in muffin tins.

Yield: 14 servings
