Shaker Oatmeal Bread

1 1/2 cup quick rolled oats
1/3 cup sugar
2 tablespoon salt
4 cup boiling water
1 tablespoon dry yeast
8 3/4 cup flour

Combine oatmeal, sugar, salt and water. Let stand until mixture is luke warm. Stir in yeast. Add flour and mix well. Cover and let rise. When double in bulk, punch down and let rise again, until double. Punch dough down again, and divide into 3 loaves. let rise until double in bulk in slightly greased bread pans. Bake at 400 degrees, 20 minutes, then reduce heat to 325 degrees, and continue baking for 20 minutes. Let cool slightly and remove from pans. This is a dry bread, vary good for breakfast toast.

Yield: 12 servings
