Shaker Pumpkin Muffins

1 cup pumpkin, cooked & mashed
3/4 cup brown sugar
1/4 cup molasses
1/2 cup butter, softened
1 each egg, beaten
1 3/4 cup flour
1 teaspoon soda
1/4 teaspoon salt
1/4 cup pecans, chopped
Cook, drain and mash the pumpkin; and put it through a strainer. Set aside. Cream sugar, molasses and butter. Add egg and pumpkin. Blend well. Mix the flour with soda and salt. Stir into pumpkin batter. Fold in pecans. Fill well-greased muffin pans about half-full with batter. Bake in preheated 375 degree oven.
Yield: 12 servings
