Shaker Refrigerator Rolls

breads

1 pkg active dry yeast
1 each egg
1/2 cup sugar
2 cup water
1 teaspoon salt
7 cup flour
1 cup butter, melted
1 tablespoon butter, melted

Place yeast in large mixing bowl. Add luke warm water and eggs, slightly beaten. Add sugar, salt, and about 3 1/2 cups flour. Add all of melted butter, and remaining flour. Place in warm, draft free place, and let rise to about double in bulk, about 2 hours. Punch down, cover, and place in refrigerator over night. Roll out on floured board, and cut with small bisscuit cutter. Butter slightly, and fold over. Put in tube pan, and let rise in warm, draft free place, until light and puffy. Bake at 450 degrees, until light brown, about 10-15 minutes. Dough should be worked as little as possible, and placed in a warm, draft free place, to rise quickly. To make clover leaf rolls, before letting dough rise for the last time, instead of rolling out on a floured board, form dough into small balls, about the size of large marbles. Place 3 balls each, in well greased muffin tin cups. Then allow to rise for the last time.
