BB: KIDS FAVORITE GIANT SHELLS

1 pkg giant shell noodles
2 can hunts light spaghetti sauce
3 cup nonfat motzarella cheese
1 lb ground white turkey
1 pkg nonfat ricotta cheese, 15oz
1/2 cup nonfat parmisan cheese
3 each egg beaters, beaten

Cook noodles as directed on box. Cook turkey in a bowl in the microwave. Cover bowl with a piece of waxed paper and cook 5 minutes. Remove, and stir. Return to microwave and cook about 3-4 more minutes. Drain turkey in a colander. In a large bowl, pour in 2, 26 and 3/4 ounce cans of nonfat spaghetti sauce. Add turkey. In a medium bowl blend together, ricotta cheese, 3 egg beaters, and 4 tablespoons of parmisan cheese. Spray 2 9 inch square pans with Pam. Pour a little of the turkey tomato sauce mixture into the bottom of each pan. Spread ricotta cheese mixture over this layer in each dish. Place noodles on top of ricotta cheese mixture. Sprinkle one half of the cheese on top of each dish. Repeat layers with sauce, giant shells, and end up with motzarella cheese and parmisan sprinkled on top. Bake at 350 degrees, 30-40 minutes. This dish can also be cooked for 10 minutes in the microwave, and placed in the oven for about 5 minutes to brown. Makes 2 9 inch square casseroles.
