Shaker Seven Minute Frosting

2 each egg whites
1 1/2 cup sugar
1/3 cup water
1/8 teaspoon cream of tartar
1 teaspoon vanilla
1/8 teaspoon salt

Place water in bottom of double boiler, and bring to a boil. Before placing top pan over boiling water, combine in this pan, all ingredients accept vanilla. Beat with electric mixer until well blended. Set pan over boiling water, and beat mixture constantly, for about 6 minutes. Beat until mixture hangs in stiff peaks. Frequently scrape sides and bottom of double boilerwith rubber spatula. Remove top pan from boiling water. Add vanilla. Beat until thick enough to spread, 1-2 minutes. Do not scrape frosting to closely from bottom of pan, as frosting may sugar.

Yield: 16 servings
