Shaker Shrimp Newberg

8 oz cooked shrimp
4 tablespoon butter
1 tablespoon flour
1/2 teaspoon salt
1/4 teaspoon red pepper
1/8 teaspoon nutmeg
1 cup cream
1 each egg yolk
2 tablespoon sherry

Melt butter in a sauce pan. Stir in flour, salt, pepper, and nutmeg. Cook, stirring constantly, until mixture is bubbley. Stir in cream, or Half and Half. Continue cooking, stirring constantly, until sauce thickens and boils 1 minute. Beat egg yolk in a bowl. Stir small amout of hot mixture into egg yolk in bowl, to prevent curdling. Stir egg yolk mixture into sauce pan. Cook, stirring constantly, 1 minute. Stir in sherry. Add shrimp when ready to serve. Serve over cooked rice or noodles.

Yield: 4 servings
