Shaker Simple Fried Chicken

1 each frying chicken
1 cup flour
1 tablespoon salt
1 teaspoon pepper
1 teaspoon sugar

Place flour, salt, pepper, and sugar, in a plastic bag. Put chicken pieces, 1 or 2 at a time in the bag and shake well. Heat about half an inch of oil in a large, heavy skillet. Place flour covered chicken, meaty side down, in skillet. When golden brown, turn chicken, and fry until well done and tender. Keep heat low, and do not hurry frying. Drain excess grease on paper towels, before serving.

Yield: 8 servings
