Shaker Sour Dough Friendship Bread

breads

2 cup shaker sour dough starter
1 1/2 cup water
1/3 cup sugar
1/2 cup cooking oil
1 tablespoon salt
5 cup flour

Please see SHAKER SOUR DOUGH STARTER recipe before making bread. Mix all ingredients including 4 cups of flour in a large bowl. Turn out onto floured board. Knead, using as much of remaining flour as needed, until dough can be handled. Knead dough until a whole punched in center will spring back. Put dough in a large bowl. Cover with a damp cloth, and let rise until double in size, 5-6 hours. Turn out onto lightly floured board, and pat out air bubbles, by kneading for several minutes until all air is worked out of dough. Divide dough into 2 portions, and place in greased loaf pans. Place pans in a warm, draft free place, and let rise again until double in size, about 2 1/2-3 hours. Since this bread rises slowly. Keep covered with a damp cloth. Place loaf pans in cold oven. Turn oven to 350 degrees, and bake until golden brown, about 40 minutes. Remove from oven. While bread is still hot butter tops of loaves. Cool. When ready to make bread again, remember to start by feeding the sour dough starter, kept in the refrigerator, the night before.
