Shaker Southern Green Beans

5 lb fresh green beans
1 teaspoon sugar
2 tablespoon bacon grease
1 each small onion, chopped
2 tablespoon ham scraps

Wash and snap ends from beans. Put beans in large cooking pot, and add about 2 quarts water. Add all other ingredients, adding salt and pepper to taste. Bring beans to a boil. Reduce heat, and simmer for about 4 hours, or until very tender. If desired, 1 galon canned green beans may be used. If using canned green beans, use about one half of the liquid in the can instead of water, and reduce cooking time to 2 hours.
