Shaker Split Pea Soup

1 tablespoon bacon grease, or butter
1 each onion, chopped
1 each country ham bone
1 each rib celery, chopped
1 3/4 cup split peas
6 1/2 cup cold water
1 tablespoon salt
1 teaspoon pepper

Cook onion in bacon grease or butter, until tender. Add ham bone, celery, and split peas, and cold water. Add salt and pepper. Simmer until peas are well done, about 50 minutes. Press through sieve or strainer. Add ham from bone to soup, and serve with croutons.

Yield: 12 servings
