Shaker Squash Casserole

2 lb squash, yellow or zucchini
3 tablespoon butter
3 each eggs, beaten
1 can cream of mushroom soup
3/4 teaspoon salt
1/2 teaspoon pepper
1 each onion, chopped
1 pkg ritz crackers
2 tablespoon parmisan cheese

Cook squash and onion until tender. Drain and mash. Fold in remaining ingredients, reserving 1/2 half of sleeve of Ritz crackers. Place in buttered casserole dish, and top with cracker crumbs and parmisan cheese. Bake at 350 degrees, for 30 minutes.

Yield: 6 servings
