Shaker Stuffed Zucchini

6 each zucchini
3 cup ritz crackers
1/2 cup grated parmisan cheese
1 each onion, chopped
3 tablespoon parsley, chopped
1/8 teaspoon pepper
1 teaspoon salt
2 each eggs, beaten
2 tablespoon butter

Wash zucchini and cut off ends but do not peel. Cook in boiling salted water for 5 minutes, or until tender. Halve lengthwise and remove pulp with spoon. Combine zucchini pulp, cracker crumbs, cheese, onion, parsley, salt, pepper, and eggs. Fill zucchini shells with mixture and dot with butter. Sprinkle with additional parmisan cheese, and bake at 350 degrees, 30 minutes.

Yield: 6 servings
