Shaker Turkey Turn Overs

2 tablespoon onion, chopped
1/4 cup celery, chopped
1 tablespoon butter
1/2 teaspoon salt
1/3 cup turkey gravy, thickened
1/2 cup cooked carrots, diced
1 1/2 cup cooked turkey, chopped
1 cup flour
2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon poultry seasoning
1/3 cup butter
1/3 cup milk

Cook onion and celery in 1 tablespoon butter until tender, about 5 minutes. Add 1/2 t salt, gravy, carrots, and turkey, and stir lightly with fork to mix well. Set aside. Combine flour, baking powder, salt, and poultry seasoning. Cut in butter, until mixture is the consistency of cornmeal. Add milk all at once, and stir quickly with a fork until dough stiffens. Knead dough 8 times on a floured bread board. Roll out to a 12 inch square, and cut dough into 4 equal squares. Place 1/4 of turkey filling in center of each square. Moisten edges of dough and fold over. Press edges together to seal. Prick top of each turn over with a fork for steam vents. Brush tops with melted butter. Place turn overs on greased baking sheet, and bake at 425 degrees, 10-15 minutes, or until golden brown. Serve turn overs with cream gravy, turkey gravy, or mushroom sauce.
