Shaker Vegetable Soup

2 lb soup meat
4 quart water
1 tablespoon salt
1 each onion, chopped
3 each carrots, sliced
2 each ribs celery, sliced
1 can tomatoes, 28oz
2 cup okra
2 cup butter beans
1/2 teaspoon sugar
1/4 teaspoon ground cloves
1 teaspoon pepper
1 cup barley

Simmer meat, with bone if desired, and salt, in water for 3 hours. Remove meat, dice, and set aside for future use. Crush tomatoes and add to broth. Add vegetables and seasonings. Cook 1 hour. Add barley and cook until barley is done. Add meat, and season with salt and pepper to taste. Vegetable soup is always better the second day.

Yield: 8 servings
