Shaker Violet Vinegar

4 cup violets, blosoms only
4 cup white vinegar

Pack jar with violets and pour white vinegar over violets in jar. Cover jar tightly, and place in sunny window until violets bleach out; 4-5 days. Strain. This can be used for an oil and vinegar dressing for garden salads, but do not use olive oil. Or, mix 1/2 cup mayonnaise and 1 teaspoon sugar, and thin with violet vinegar, to use over salad greens.

Yield: 12 servings
