Single Pie Crust

1 cup flour
1/2 teaspoon salt
1/3 cup butter, plus
2 tablespoon butter
1/4 cup ice water

Combine flour and salt. Add butter and blend until mixture becomes crumbley. Add ice water and mix quickly. Work dough until it forms a ball. Do not over work, as this will toughen the dough. Roll to 1/8 inch thickness. Line 9 inch pie pan, crimp edges and prick bottom with fork. Bake at 450 degrees, 12-15 minutes. Add filling and bake 10-15 minutes. Then reduce heat to 350 degrees and bake 30-40 minutes. For custard type pie fill before baking and do not prick bottom with fork.

Yield: 8 servings
