SOME-MORE PIE: (Easy Egg Pastry Crusts)

3 each eggs
2 cup milk
1 pkg regular vanilla pudding
1 cup miniature marshmallows
1/2 cup milk chocolate chips
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 tablespoon sugar
1 each graham cracker crust, 9 inch

Prepare graham cracker crust, and press into 9 inch pie plate. Bake at 375degrees, 5-6 minutes, or until brown. Cool. Separate egg yolks from whites. This works best when eggs are at room temperature. Set egg whites aside for later use. In sauce pan beat egg yolks, slightly. Stir in milk and vanilla pudding mix, (6 serving size). Cook and stir till thickened and bubbley. Remove from heat. Cover surface to prevent a skin from forming, and cool. Place miniature marshmallows in baked crust. Sprinkle milk chocolate chips evenly over marshmallows. Spoon filling atop. In medium mixing bowl, beat egg whites, vanilla and cream of tartar, till soft peaks form. Gradually add sugar, 1 tablespoon at a time, with mixer at high speed, 4 minutes, or till stiff peaks form. Spread meringue over filling, and seal to edges. Bake 350 degrees, 12-15 minutes, or till meringue is golden. Cool before serving.
