Southwestern Meat Rub

1/2 cup chili powder
2 tablespoon salt
2 tablespoon ground cumin
2 tablespoon ground coriander
1 tablespoon ground black pepper
1 tablespoon ground cayeen pepper

In small bowl, mix all ingredients. Rub spice mixture on fish, meat or poultry. Grill or broil right away, or cover and let stand 15-20 minutes before cooking. Use 1 tablespoon spice mixture per pound of uncooked beef, lamb, or pork. 2 teaspoons per pound of uncooked fish or chicken. 1/2 teaspoon per side, for ground meat patties. Store in tightly covered container up to 6 months. Makes about 1 cup.
