SPATZLE: (Stew Meat Mix: Autumn Stew)

1 cup plus 2 tablespoons flour
1 each egg
1/2 cup milk

In small bowl, stir together flour, and 1 teaspoon salt. Blend egg and milk. Stir into flour mixture. Place half of dough into strainer or colander, and hold over Autumn Stew, or soup kettle. Using wooden spoon, press dough through strainer, to form Spatzle. Repeat with other half of dough. Cook and stir, 5 minutes. Stir spatzle into Autumn Stew, or soup before serving.

Yield: 4 servings
