Spiced Apple Rings

2 cup water
1/2 cup sugar
3/4 cup honey
2 tablespoon lemon juice
1 each stick cinnamon 6 inch broken
6 each whole cloves
3 lb cooking apples

In large saucepan, combine water, sugar, honey, lemon juice, cinnamon broken into pieces, and cloves. Heat syrup, stirring to dissolve sugar. Wash apples, (Granny Smith, apples work best), core, and cut into 3/8 inch rings. Add 1/4 apple rings at a time, to syrup. Cook covered, 5-10 minutes, or till apples are almost tender. Repeat with remaining apple rings. Pack apple rings and syrup in freezer containers, leaving 1/2 inch head space to allow for expansion during freezing. Cool. Adjust lids, label, and freeze.

Yield: 24 servings
