SPICY HAM PATTIES WITH APPLE RINGS: (Herb Stuffing Mix)

4 each eggs, beaten
1/2 cup apple sauce
1 1/2 cup herb stuffing mix, crushed
1/3 cup dry milk
1/4 cup onion, chopped
1/2 teaspoon dry mustard
1 1/4 lb cooked ham, ground
1 tablespoon brown sugar
2 teaspoon corn starch
1/4 teaspoon dry mustard
1/8 teaspoon cloves
3/4 cup apple sauce
2 tablespoon water
1 tablespoon vinegar
1 each apple

In large mixing bowl, combine eggs, 1/2 cup apple sauce, and crushed herb stuffing mix. Stir in dry milk, onion, and 1/2 teaspoon dry mustard. Add ham, and mix well. Using hamburger press, or with hands, shape mixture into six patties. (Oil press if necessary, to prevent meat from sticking.) Place patties, in 13-9 inch baking pan. Bake at 350 degrees, 40-45 minutes. Meanwhile, in saucepan, combine brown sugar, corn starch, 1/4 teaspoon dry mustard, and 1/8 teaspoon cloves. Blend in 3/4 cup apple sauce, water, and vinegar. Cook and stir till thickened. Core apple, and slice into six rings. Add apple rings to saucepan. Cover and simmer, 15 minutes, or till apples are just tender. To serve, arrange an apple ring atop each ham patty. Spoon sauce over, ham and apple ring.
