Spicy Peanut Snack Mix

1 each egg white
2 teaspoon water
3 tablespoon sugar
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
5 cup check cereal
1 each jar peanuts, 8oz

In small bowl, blend egg white and water. Stir in sugar, and spices. Beat till mixture is frothy. In 13-9 inch baking dish mix cereal and dried roasted pea nuts. (Suggested Check type cereals include: wheat, corn, and rice). Add egg white mixture. Toss to coat. Bake at 350 degrees, 15 minutes. Remove from oven and stir. Cool 5 minutes. Remove from baking dish, cool thoroughly. Store in air tight container. Makes 7 cups.
