Strawberry Feta Salad

6 each heads boston bib lettuce
4 oz feta cheese, crumbled
1 cup strawberries, sliced
1 cup vinegar
1 cup sugar
1/2 teaspoon cayeen pepper
1/2 teaspoon paprika
1 teaspoon dry mustard
1 cup oil
3 each cloves garlic, quartered

Bring vinegar and sugar to a boil. Add all other ingredients, accept lettuce, strawberries, and cheese. Mix well. Pour into covered container, shake well, and refrigerate. Toss lettuce, strawberries, and Feta cheese. When ready to serve, shake dressing again before pouring over salad. Use approximately 1/2 dressing for salad, and toss lightly. Remaining dressing can be refrigerated for later use.

Yield: 8 servings
