STUFFED PEPPERS: (Ground Meat Mix)

4 each large green peppers
10 cup boiling water
2 cup ground meat mix
1 1/4 cup potato chips, crushed
3/4 cup buttermilk
2 each eggs, beaten
1/4 cup ketchup
1/4 teaspoon poultry seasoning
1/4 teaspoon paprika

Slice tops from green peppers, remove seeds, and rinse peppers. Place peppers in 10 cups boiling water in 4 quart cooking pot. Boil for 10 minutes, and remove peppers from pot. Sprinkle green pepper cavities with salt. In medium mixing bowl combine ground meat mix, 1 cup crushed potato chips, buttermilk, eggs, ketchup, and poultry seasoning. (If buttermilk is not available, blend 1 tablespoon vinegar into scant cup of milk. Let milk stand 5 minutes, in order to clabber, or sour. Use 3/4 cup milk in recipe, then discard remaining milk.) Fill green pepper cups with meat mixture. Place filled peppers in 9 inch baking dish. Sprinkle with remainining potato chips, and paprika. Bake at 375 degrees, 30 minutes, or till heated through.
