Sweet Potato Turkey Pie

2 can sweet potatoes, 18oz
1/4 cup butter, melted
2 each eggs,
1/4 teaspoon nutmeg
1/4 teaspoon all spice
1 cup onion, chopped
2 tablespoon butter
1 can cream of mushroom soup
1/4 cup milk
3 cup cooked turkey, diced
1 pkg frozen vegetables, 10oz
2 each tomatoes, peeled, diced
4 each slices american cheese

Drain sweet potatoes, then beat till smooth. Add 1/4 cup melted butter, 1 egg, nutmeg, all spice, and 1/2 teaspoon salt. Line 2, 9 inch pie plates with sweet potato mixture, building up sides about 1 inch. Cook onion in 2 tablespoons butter. Combine onion, soup, 1 egg, and milk, and mix well. Add turkey, frozen mixed vegetables, and tomatoes. Spoon half of turkey mixture into each pie plate. To bake, cover 1 pie pan with foil. Bake at 350 degrees, 15 minutes. Uncover, and bake an additional 25 minutes. Cut 2 slices of cheese into 4 triangles. Arrange 4 cheese triangles atop pie. Bake 10 minutes, or till cheese melts. To freeze for later use, cover 1 pie pan with foil, label, and freeze. When ready to use, rememberto place 4 cheese triangles atop pie during final 10 minutes of baking. Makes 2 pies.
