TEXAS BEEF SKILLET: (Ground Meat Mix)

2 cup ground meat mix
1/2 cup water
1 can crushed tomatoes, 16oz
1 can red kidney beans, 15oz
1 cup water
1/2 cup cooked rice
3 tablespoon green pepper, chopped
1 1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic salt
3 oz cheddar cheese
1 single corn chips, crushed

Place uncooked rice and 1 cup water in covered sauce pan, and bring to boiling. Reduce heat to low, and simmer 20 minutes. Set rice aside. In skillet combine, ground meat mix and water. Cover and cook over low heat, 15 minutes, breaking up meat mixture with fork. Stir in tomatoes, undrained kidney beans, rice, chopped green pepper, chili powder, salt, and garlic salt. Bring mixture to boiling. Reduce heat, cover and simmer 20 minutes, stirring occasionally. Meanwhile, grate cheese, and sprinkle over meat mixture. Cover and heat 3 minutes, or till cheese melts. Sprinkle crushed corn chips around edges of individual serving dishes. Serve hot. Pass additional chips if desired.
