Toasted Pumpkin Seeds

1 cup pumpkin seeds
1 tablespoon cooking oil
1 tablespoon salt, approximately
Thoroughly wash pumpkin seeds. Pat dry. If using microwave, place oil in bottom of glass pie plate. Cook until hot, add seeds. Toss to coat. Cook on high 10-12 minutes, stirring at 4 minute intervals. Sprinkle with salt, garlic salt or cinnamon sugar. If using conventional oven grease cookie sheet with oil and add seeds, turning to coat. Bake at 325 degrees, 20-25 minutes, stirring once or twice during cooking. Remove from oven, sprinkle with salt, garlic salt or cinnamon sugar.
Yield: 12 servings
