Turkey Vegetable Soup

1 cup dry navy beans
8 cup water
2 teaspoon salt
1 each turkey carcus
1 each onion, chopped
1 1/2 teaspoon worcestershire sauce
1/2 teaspoon poultry seasoning
1/2 teaspoon sage
1/4 teaspoon pepper
1 can whole kernel corn, 16oz
2 each ribs celery, chopped
2 each carrots, sliced
1 each potato, cooked, cubed

Soak beans in 8 cups water over night in covered 6 quart cooking pot. Do not drain. Break apart turkey carcus to fit pot, and add to navy bean mixture. Stir in chopped onion, worcestershire sauce, salt, poultry seasoning, sage, and pepper. Cover and simmer, 1 hour. Remove turkey carcus, and cool slightly. Cut meat off bones, and chop meat. Slightly mash beans. Return chopped meat to cooking pot. Add corn, chopped celery, carrots, and potato. Cover and simmer, 30 minutes, or till vegetables are tender.

Yield: 10 servings
