Ultimate Fried Chicken

3 lb chicken, 8 pieces
1 tablespoon salt
1 tablespoon pepper
1 each egg, large,
1/2 cup evaporated milk
1 cup flour
1 teaspoon paprika
1/4 teaspoon thyme
1/2 teaspoon garlic powder

Sprinkle chicken with salt and pepper. Place in shallow baking dish. In bowl, with fork, beat egg and add milk. Mix until blended. Pour mixture over chicken. Let stand 5 minutes. In heavy brown paper or plastic food storage bag, combine flour, paprika, thyme and garlic. Shake to mix well. In batches if necessary, drain chicken and place in bag. Shake until well coated. In deep fat fryer or deep, heavy sauce pan, heat oil to 350 degrees. Fry chicken, in batches if necessary, 8 to 9 minutes for wing or breast halves, and 8 to 10 minutes for legs and thighs. With tongs or using fry basket transfer chicken to plate covered with paper towels to drain. Makes 4, 2-piece, servings.
