Vegetable Quiche

cheese/eggs, main dish, vegetables

8 each eggs
1 pkg frozen broccoli culiflower
1 pint half and half
2 tablespoon flour
1 teaspoon salt
1/8 teaspoon garlic
1/8 teaspoon nutmeg
1/4 teaspoon sugar
1/8 teaspoon cayeen pepper
1 each onion, grated
10 each slices swiss cheese
2 each 9 inch pie shells

Place 5 slices of swiss cheese in bottom of each unbaked pie shell. Arrange half of vegetables atop cheese in each pie shell. In large bowl combine eggs, flour, half and half, garlic, nutmeg, salt, sugar, cayeen pepper and grated onion. Mix thoroughly. Pour half of egg mixture over vegetables in each pie shell. Bake at 425 degrees, 15 minutes. Reduce heat to 300 degrees and bake an aditional 40 minutes.

Yield: 16 servings
