WHOLE WHEAT POTATO PAN CAKES: (Whole Wheat Yeast Bun Mix
breads, vegetables
2 each large potatoes, peeled
1/2 cup bun mix
1/2 teaspoon salt
2 each eggs, beaten
2 tablespoon cooking oil
Grate potatoes, and place in large bowl. Add whole wheat bun mix and salt. Mix thoroughly until potatoes are coated evenly. Stir in eggs. Measure 1/3 cup potato mixture for each pan cake. In large skillet cook pan cakes in hot cooking oil, over medium heat, 3 minutes per side or till potato pan cakes are golden.
Yield: 6 servings
