Winter Cocoa Mix

1 1/2 cup cocoa
1 1/4 cup sugar
5 oz simisweet choc, chopped
1 each vanilla bean

In food processor with knife blade attached, blend cocoa, sugar, and chocolate, until almost smooth. Cut vanilla bean crosswise in half, then cut each piece inhalf lengthwise. Stir into chocolate mixture. Store at room temperature in tightly covered container up to 6 months. Makes about 3 1/2 cups cocoa mix. For each serving, in mug mix 3 tablespoons Winter Cocoa Mix, (do not include vanilla bean), with 1 cup milk. Microwave on high, 2-3 minutes, stirring once, until blended and hot. Or, in 1 quart sauce pan, whisk 3 tablespoons Winter Cocoa Mix, (do not include vanilla bean(, with 1 cup milk. Heat mixture over medium heat, whisking frequently, 8-10 minutes, until blended and hot.

Yield: 18 servings
