WW: BEEF STROGANOFF

2 teaspoon olive oil
1 lb lean round steak, diced
2 each onions, chopped
2 teaspoon minced garlic, in a jar
1 tablespoon flour
2 cup sliced mushrooms
1 cup vegetable juice
1 cup beef broth
1 tablespoon worcestershire sauce
1/4 cup minced parsley
1/4 cup nonfat sour cream
4 cup cooked egg noodles

Heat oil in a large nonstick skillet. Add beef and cook until browned, about 5 minutes. Transfer cooked meat to a plate and set aside. Spray same skillet with pam, and heat. Add onions and garlic and cook until softened, about 5 minutes. Add flour and cook, stirring constantly, until flour is lightly brown, about 1 minute. Return meat to skillet and stir in mushrooms, vegetable juice, broth, and worcestershire sauce. Bring to a boil. Reduce heat and simmer, covered, until beef is tender, about 45 minutes. Stir in parsley and sour cream. Cook until heated through, about 2 minutes. Serve noodles, topped with the beef mixture.
