2 teaspoon olive oil
4 each chicken thighs, boneless
1 each onion, chopped
2 teaspoon garlic, in a jar
3 cup sliced mushrooms
1 can diced tomatoes, 14 1/2oz
1 each green pepper, diced
1/4 cup tomato paste
1 teaspoon dried oregano
1/4 teaspoon black pepper
4 cup hot cooked spaghetti

Heat oil in a large nonstick skillet. Add 4, 4 ounce boneless chicken thighs, and brown 2 minutes on each side. Transfer browned chicken to a plate. In the same skillet, cook onion and garlic, stirring as needed, until tender, about 5 minutes. Add mushrooms, tomatoes, green pepper, tomato paste, oregano, and black pepper. Bring to a boil, stirring as needed. Return chicken to the skillet. Reduce heat and simmer covered, stirring as needed, until chicken is cooked through, about 25 minutes. Serve spaghetti topped with the chicken and sauce.
