4 teaspoon low fat margarine
4 each celery stalks, diced
4 each scallions, diced
2 tablespoon flour
2 cup skim milk
2/3 cup low fat cheddar cheese
2 cup cooked chicken, diced
2 cup cooked macaroni
1 cup peas
14 each nonfat salteen crackers,

Preheat oven to 350 degrees. Melt margarine in a large nonstick sauce pan. Add celery and scallions and cook, stirring as needed, until vegetables are tender, about 4 minutes. Add flour and cook, stirring constantly, until lightly browned, about 1 minute. Stir in the milk and cook, stirring constantly, until the mixture boils and thickens, about 3 minutes. Add cheese and stir until melted. Stir in the chicken, macaroni, and peas. Cook, stirring as needed, until heated through, about 3 minutes. Transfer to a Pammed 2 quart casserole and top with cracker crumbs. Bake until crackers are lightly browned, about 10 minutes.
