WW: FRUIT KUGEL MUFFINS

1 cup grated apple
1 cup grated carrot
1 cup grated sweet potato
1/2 cup chopped pitted prunes
1/2 cup raisins
2 1/2 cup mmatzoh meal
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoon lemon juice
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Spoon into ungreased foil bake cups, and bake for 40minutes. Per serving: 2 points, calories, 156, total fat 0.4 G, saturated fat 6 G, cholesterol 0 MG, sodium 16 MG, carbohydrate 38 G, fiber 4 G, protein 2 G, calcium 30 MG.
