WW: HAM, CHEESE, AND VEGGY SCRAMBLE

1 each carrot, chopped
1 each zucchini, diced
4 each scallions, sliced
1/4 cup chopped mushrooms
2 each eggs, beaten
1/4 cup diced lean ham
1/8 teaspoon black pepper
1/3 cup nonfat sharp cheddar cheese

Spray a large nonstick skillet with Pam, and heat. Add carrot, zucchini, scallions, and mushrooms. Cook, stirring constantly, until vegetables are tender, 5-6 minutes. Add eggs, ham, and pepper. Cook, stirring constantly, until eggs are cooked, 2-3 minutes. Add cheese and cook, stirring constantly, until cheese is melted, about 30 seconds. Per serving: calories 169, total fat, 7 G, saturated fat 2 G, cholesterol 222 MG, sodium 395 MG, carbohydrate 11 G, fiber 3 G, protein 18 G, calcium 228 MG, points 3.
