WW: HAWAIIAN TURKEY STIR FRY

1 teaspoon olive oil
2 each carrots, chopped
2 each celery stalks, sliced
2 each onions, chopped
2 tablespoon flour
2 tablespoon cold water
1 cup chicken broth
2 cup cooked turkey breast, cubed
2 cup sliced mushrooms
1 can pineapple chunks, 20oz
1 teaspoon dried thyme
1/4 teaspoon dried sage
4 cup hot cooked brown rice

Heat oil in a large nonstick skillet. Add carrots, celery, and onion, and cook, stirring as needed, until vegetables are tender, about 5 minutes. In a small bowl combine flour with cold water, and mix to a smooth paste. Stir in broth and mix until smooth, and pour into the skillet. Cook stirring constantly, until mixture boils and thickens, 2-3 minutes. Stir in turkey, mushrooms, undrained pineapple, thyme, and sage. Bring turkey mixture to a boil. Reduce the heat and simmer covered, until heated through, 2-3 minutes. Serve the rice topped with the turkey mixture.
