WW: HOLIDAY STUFFING

1 each celery stalk, chopped
1 each onion, chopped
1/2 cup chopped mushrooms
1 can water chestnuts, 8oz
3 tablespoon minced parsley
1 teaspoon sage
1 pkg herbed stuffing mix, 8oz

Preheat oven to 350 degrees. Spray a 2 quart casserole with Pam. Spray a large nonstick sauce pan with Pam, and heat. Add celery, onion, and mushrooms. Cook, stirring as needed until vegetables are tender, about 5 minutes. Stir in drained, sliced, water chestnuts, parsley, sage, and one 1/2 cups water. Bring to a boil. Remove from heat, and stir in stuffing mix. Transfer mixture to prepared casserole. Bake until heated through, and slightly crispy on top, about 20 minutes.
