WW: MEDITERRANEAN CHICKEN

2 teaspoon lemon pepper
1/3 cup flour
4 each chicken breasts
4 each scallions, chopped
1 each lemon, juice only
1/8 teaspoon curry powder
3 tablespoon italian dressing
1 each avicado, diced
3 each plum tomatoes, diced

Preheat oven to 400 degrees. Coat a baking dish with cooking spray. Combine seasoning and flour in a small bowl. Lightly coat the chicken with cooking spray and then coat each breast with the flour mixture. Place chicken in the prepared dish and cook for 20 minutes, or until cooked through. In a bowl combine scallions, lemon juice, curry powder, dressing, avicado, and tomatoes. Divide the chicken breasts between 4 plates and top with the avicado salsa. If desired, sliced water chestnuts can be substituted for the avicado. Variation: You can also use grilled tuna with a fruit salsa, made with mango, papaya, red pepper, red onion, and balsamic venigar.
