WW: OVEN BEEF STEW

1 1/2 lb lean round steak, cubed
6 each small red potatoes quartered
3 each carrots, sliced
2 each celery stalks, sliced
2 each onions, chopped
1 cup mixed vegetable juice
1/2 cup beef broth
1/4 cup red wine vinegar
2 tablespoon tapioca or brown rice
2 tablespoon worcestershire sauce
1 tablespoon paprika
1/2 cup minced parsley

Preheat oven to 325 degrees. Spray a 4 quart dutch oven with pam. In prepared dutch oven, combine beef, potatoes, carrots, celery, onions, vegetable juice, broth, vinegar, tapioca, worcestershire sauce, and paprika. Bake covered, until beef and vegetables are tender, about 3 hours. Stir in the parsley and serve. Per serving: calories 325, total fat 4 G, saturated fat 1 G, cholesterol 65 MG, sodium 202 MG, carbohydrate 40 G, fiber 5 G, protein 31 G, calcium 50 G, points 6.
