2 each medium white potatoes
1/4 cup low fat cottage cheese
1/4 cup chunky salsa
1 single salt and pepper to taste
Preheat oven to 400 degrees, and coat a baking sheet with non-stick cooking spray. Cut unpeeled potatoes into wedges, and lightly spray wedges with cooking spray. Season to taste with salt and pepper. Bake for 40-60 minutes, or until golden brown, turning halfway through cooking. Top with cottage cheese and salsa.
