WW: POTATO PUDDING

1 1/4 lb baked sweet potatoes, grated
1/2 cup grated onion
2 each eggs, beaten
1/4 cup matzo meal, plus:
2 tablespoon matzo meal
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced scallions

Preheat oven to 350 degrees. Spray a 13-9 inch baking pan with cooking spray and set aside. In a large bowl combine,peeled, cooked, and shreaded sweet potatoes, onion, and egg. Stir in remaining ingredients, mix well, and gently spoon into the prepared pan. Bake 35-40 minutes, until browned around the edges. Let stand 5 minutes before cutting into 12 equal pieces. Per serving: 1 point, calories 70, total fat 1 G, cholesterol 35 MG, sodium 105 MG, carbohydrate 13 G, protein 3 G.
