WW: SWEET AND SOUR GINGERED PORK

1 teaspoon olive oil
3/4 lb lean pork tinder loin, cubed
2 each carrots, chopped
2 each celery stalks, diced
1 each green bell pepper, diced
1 each onion, chopped
2 teaspoon minced garlic, in a jar
1/4 cup chili sauce
1/4 cup grape spreadable fruit
1 teaspoon chopped crystalized ginger
4 cup hot cooked brown rice

Heat oil in a large nonstick skillet. Add pork and cook until browned, about 5 minutes. Add carrots,celery, green pepper, onion, and garlic. Cook until pork is cooked through and the vegetables are tender crisp, 6-8 minutes. Add chili sauce, spreadable fruit, ginger, and 1/2 cup water. Cook, stirring constantly, until heated through, about 3 minutes. Serve the rice topped with the pork mixture.
